NO bake Almond Joy energy bites
2 1/2 cup quick oatmeal plain
1/2 cup creamy PeanutButter (about 2 large spoonful)
2 smashed bananas
1/4 cup unsweetened shredded coconut
1/4 cup melted dark chocolate chips
In a medium bowl smash the bananas, you can use a fork or potato masher.
Stir the PeanutButter and banana together until creamy.
Add in the oats and combine 1 cup at a time.
In a small bowl add the coconut flakes.
Make a little ball out of the oatmeal mixture, about 1 tbsp amount or 1 small spoonful. (this works well with wet hands so the oatmeal doesn't stick)
After making a ball, roll it into the coconut flakes and set aside on a baking tray or other dish. (These will NOT bake)
Repeat steps 5-6 until finished, this should make about 24-30 bites.
Once all the bites are rolled and dipped in coconut, heat the dark chocolate up until it is melted. You can do this in a microwave safe bowl, I used my Pyrex mixing cup; or on the stovetop whichever you prefer. Be careful not to burn the chocolate mine melted in about 30/ 45 seconds in the microwave.
Drizzle over the top of the bites.
Let cool in the fridge for 30 min, freezer for 15, or on the countertop for about 2 hours. Just enough time to set the chocolate.
Store in an airtight container in the fridge. These need to go in the fridge when they're complete or the banana mixture will start to mold pretty quickly. Eat within 3 days. Or freeze the extra!
