Easy Chicken Fried Rice

Prep time: 5 minutes

Cook time: 15 minutes (with precooked rice and chicken)

Serves: 4-6

Ingredients:

  • 4 cups cooked rice chilled

  • 1 bok choy 

  • 1/2 bag shredded carrots

  • 3 eggs

  • 3 chicken breasts cooked 

  • 1/4 cup soy sauce 

  • 1/4 cup Asian style salad dressing (I used Asian style sesame vinaigrette from simple truth organic)

How to cook:

  1. Chop the bok choy. 

  2. In a large pot on the stove on medium heat cook the bok choy and shredded carrots stirring occasionally for 5- 10 minutes until softened.

  3. Next add the cooked rice and cooked chicken to the pot. Cook until warm. stirring often to break up the rice.

  4. In a separate pan scramble and cook the eggs.

  5. Add the egg to the other ingredients. 

  6. Add the sauces and stir!

  7. Serve and enjoy!
