My husband loves baked pecan crusted chicken , and it is moving right on up their into the family favorites. I came up with this while my mom was visiting. My mother eats a gluten free diet so I could not just roll the chicken in bread crumbs. In steps the ingenuity in the kitchen that I am grateful to have. Nothing like looking in the cabinet and knowing your guest will not eat most of the stuff you have in the cabinet! Gets the wheels turning in your head to see what you can make, because most take-out / order-in has gluten in it too!

Baked Pecan Crusted Chicken
Ingredients:
3 pounds chicken breast
1 Tbsp onion powder
2 tsp Italian herb seasoning mix
1 Tbsp Garlic powder
1 tsp Paprika
1 Cup Pecans
Preheat oven to 375 degrees. Spray olive oil in the bottom of a 13×9 inch baking dish. Now put all of the spices and pecans into a food processor, and blend them until a crumbly powder like texture. You could use a blender if you do not have a food processor. Once you have the mixture prepared coat the chicken pieces evenly in the mixture. If you want it to cook faster cut the pieces smaller before coating in the mix. Bake for approximately 45 minutes, or until the chicken is done.
What to do for side dishes!

You know those days where you just have to will yourself out of bed, and you are just in a funk? Well that was yesterday! I was up late the night before, hunting the large cockroach in my son’s room, that scared him to death! To top that off his younger brother was already asleep in the same room, and I was trying to keep it that way. Long story short we never got the roach and I ended up with a 3 year old in my bed. Then at 3 am there was a screaming toddler in the crib with a lost pacifier, the fun never ends.
Fast forward to the morning! All of my alarms are off because I am going to try to wake up early without waking up the kiddo! To accomplish this right before bed I downed a 20 ounce glass of water to ensure that I will have to get up and go pee early in the morning! I don’t know if you have ever shared a bed with a small child, but they move more than any adult I have ever seen. I rolled out of the bed to stumble to the bathroom, and convince myself I am to tired to work out. I manage to sleep until 7:30AM when the kid in my bed goes wake up mom the sun came up!
I spent most of the day in a funk, and did not want to do anything! I got a text from my very pregnant friend that said she had done loads of stuff around the house today, and she was determined to finish her list of task.
If you don’t really know me here is a quick over view:

- My house runs on a schedule
- I have 2 small kids and we are never late to anything. We are usually15 or more minutes early!
- Structure is a must for me!
Ok, quick over view complete. Knowing that someone had actually made it through a sleepless night of pregnancy, and was tackling her to do list made me feel like a SLUG! At this point I realize I was behind, and my youngest was misbehaving because it was after nap time! I got the kids ready for nap, and sat down with Eat That Frog by Brian Tracy. Basically the book is about structuring your time, and completing task in a timely and efficient manner. I knocked out 2 chapters, and got off my booty to tackle some chores.
To sum it up if you find yourself in a funk you need good friend to get you out, and information to help you learn new skills. I would highly recommend Eat That Frog by Brian Tracy! You can do whatever you set your mind to. Even if you are low on sleep, and juggling 2 small children! If you are not sure where to start do your work out, and think about what you should do next. Most likely shower, but your next task might be tackling the lawn in which case showering is not a good next step!
